This blend is a concentrated essence of sun-dried peppers, toasted aromatics, and hand-selected herbs designed to honor the deep, medicinal warmth of West African soil. Ingredients

For the Base
• 3 red bell peppers
• 2 medium tomatoes
• 1 small onion
• 1 scotch bonnet (adjust to preference)

For the Pot
• 1/2 cup neutral oil
• 1 medium onion, thinly sliced
• 2 tablespoons tomato paste
• 2 teaspoons Grain Festival blend
• Salt and bouillon powder to taste

For the Rice
• 2 cups long grain parboiled rice (The Perfect Rice for Jollof. Alternative is Basmati Rice)
• 3 1/2 cups hot water or light vegetable stock

1: Blend & Reduce

Blend bell peppers, tomatoes, onion, and scotch bonnet until smooth. Pour into a dry pot and begin reducing over medium heat.

Do not rush this stage. You are evaporating water. You are concentrating sugar. You are softening acid. Reduce until the mixture thickens and the color deepens slightly.

Set aside.

2: Oil & Bloom (The Structural Moment)

Heat oil in a heavy pot over medium heat. Add sliced onions. Cook until softened but not browned.

Add tomato paste. Fry gently until it darkens slightly.

Now add Grain Festival. Stir into the oil. This is the bloom stage. The aroma would deepen and the base will lose it's rawness.

The oil should carry the spice. If it smells sharp or burnt, your heat is too high. Reduce heat.

3: Integrate & Reduce Again

Add the reduced pepper mixture to the oil base. Stir and cook while uncovered. Wait for the oil split. You will see oil separating at the edges. This is your structural signal.

Do not add rice before this stage.

4: Rice & Steam Discipline

Rinse rice until water runs mostly clear through your colander, then add clean rice to the pot.

Stir gently to coat evenly with the base mix, then add water or light stock.

Bring to a light boil then taste for salt balance. This is the time to add any extra spices you want to. Our jollof blend however contains everything you need. This is also the perfect stage to add your second batch of thinly sliced onions.

Once properly combined, reduce heat to low, cover tightly and stop all stirring activities. Do not stir repeatedly.

Allow steam to complete the architecture.

Cook 20–25 minutes. Check once near the end. Ensure your jollof rice is not overcooked or mushy. TIP: Use chopsticks to check dryness and to lift compacted rice to allow better aeration an drying.

Now you can garnish with chopped spring onions or chives for the final serve
